Yes… that is right.. tried out a new cake recipe without using sugar and eggs, and it turned out pretty awesome!
Those who are trying to reduce consuming sugar and do not eat eggs would find it a great fit!
Recipe
Soak 2 cups of pitted dates in 1.5 cup of hot milk for a few hours.
Blend the mixture and add half a cup of oil (vegetable or canola).
Add 1 tsp of vanilla essence to this mixture and blend well.
Now, mix 1 cup of all purpose flour with 1 tsp of baking soda and 1/2 tsp of baking powder.
Add the dry and wet ingredients slowly.
Mix 1/2 cup of chopped walnuts into the mixture. Keep aside 1/4th cup of chopped walnuts aside for topping.
Grease a cake pan and pour the mixture into it. Sprinkle the chopped walnuts on top of it.
Bake for 45 minutes at 350oC.
Cool and serve!

Soft and fluffy date walnut cake (no sugar and no eggs) tastes great!
