Coconut poli is a delicacy in South India.
Also known as sweet paratha at home!
Ingredients to prepare the dough
2 cups wheat flour (or Maida/All purpose flour)
Pinch of salt (to taste)
1/4 stick butter diced into smaller bits
1/2 to 1/3 cup warm water to prepare dough
Knead all ingredients and prepare the dough. Leave it for 30 minutes.
Ingredients for filling
1 cup jaggery
2 cups grated coconut
1/4 cup Cashews broken into small pieces
1/4 tsp cardamom powder
Heat the jaggery in a shallow pan and when it starts to melt, add the cardamom powder and cashew bits. Then, add the grated coconut, mix it well and turn off the heat. Let it cool for 10 minutes.

Preparation
Make 8-10 round balls of the dough
In each of the ball, make a hole in the center and fill it with a small quantity of the stuffing
Close the dough ball
Roll it flat and round (shaped like a tortilla / roti).

Cook the stuffed roll on a pan – heating it on both sides. Apply some ghee / butter on both sides while cooking

Ready to serve.

Variations
- Almonds, pistachios, pecans, walnuts – change the nuts inside for a change in taste.
- Add raisins or dried cranberries for a change
- Use shredded coconut instead of freshly grated coconut for a different taste. Add another 1/3 cup of shredded coconut to maintain same consistency.
- The stuffing is tasty and can be eaten just as a sweet dish in itself!
Coconut Poli can be refrigerated for up to 1 week and warmed up before eating.
