Snack recipes – #10 Chocolate Raspberry cookies

Also known as Chocolate Raspberry Thumbprint cookies!

These simple and tasty cookies are usually a crowd favorite!

Chocolate Raspberry Cookies Recipe

Ingredients

  • 2 cups flour
  • 1/ tsp baking soda
  • 4 oz of unsweetened chocolate
  • 1/2 cup butter
  • 1 tsp Cardamom powder
  • 8 oz cream cheese softened
  • 1.25 cups sugar (Set aside .25 cups for rolling the cookies and use 1 cup for the recipe)
  • 1 egg
  • 1 tsp vanilla essence
  • 1/3 cup red raspberry jam

prep work

Mix flour, baking soda and salt in a medium sized bowl (Dry Ingredients)

Microwave chocolate and butter in a large microwaveable bowl on HIGH 2 mins and stir until chocolate is completely melted.

Add cream cheese and stir until completely melted.

Stir in 1 cup sugar, egg and vanilla essence, whisking it slowly.

Now, add the Dry ingredient mixture to the above and mix well.

Refrigerate for 15 minutes.

Process

Heat oven to 375 degrees F. Roll dough into 1-inch balls and coat them with the remaining sugar.

Place the cookies 2 inches apart on a cookie sheet.

Press your thumb into the center of each ball and fill them with 1/4 tsp raspberry jam.

Bake 8 to 10 minutes or until lightly browned and take them out.

Let it cool on a baking sheet for about 20 minutes and pack it into an airtight container.
